The Heart of the Bakery
A massive 12-foot brick baking chamber with a hand-built barrel-vaulted ceiling sits at the center of The Historic Frontenac Bakery. Wedge-shaped bricks and deep layers of sand capture heat and release it steadily throughout the baking cycle.
Bakers still use long wooden peels to move rows of dough by hand, continuing a rhythm and craft passed from one generation to the next.
